The seeds of sunflower can be eaten raw or cooked. Rich in fats, the seed can be ground into a powder, made into sunflower butter or used to make seed yoghurt. When mixed with cereal flours, it makes a nutritious bread. Lewis and Clark made mention in their journals of its usage by the Plains Indians. The sunflower can be found in the following states: all U.S. States except Alaska, Maryland and Virginia.
